- Appearance: Colorless transparent crystal or white crystalline powder
- Odor: Odorless, strong refreshing sour taste
- Solubility: Freely soluble in water; soluble in ethanol; slightly soluble in ether
- Melting Point: Loses crystal water at 70–75 °C, melts at 135–152 °C (anhydrous)

- Thermal stability: Dehydrates to anhydrous citric acid at above 70 °C; decomposes above 175 °C to generate aconitic acid, carbon dioxide and acetone
- Photostability: Stable under natural light, no discoloration or degradation
- Compatibility: Compatible with most food raw materials, pigments, preservatives and cosmetic ingredients; incompatible with strong oxidants, alkaline substances in high temperature environment
