- Photodegradation: Extremely sensitive to UV and strong light, isomerizes into cis-isomers with reduced physiological activity
- Saponification: Under alkaline heating hydrolysis to retinol and acetate ion
- Thermal stability: Stable below 60 ℃; high temperature above 100 ℃ accelerates oxidative decomposition
- Antioxidant matching: Compound with vitamin E can effectively slow down oxidation deterioration
