Physical Properties

1. Appearance: Yellow or orange-yellow crystalline powder
2. Odor: Odorless, tasteless
3. Solubility: Insoluble in cold water, slightly soluble in hot water; soluble in dilute alkaline aqueous solution; insoluble in ethanol, acetone, ether, chloroform
4. Melting Point: Decomposes at 250℃ and above without distinct melting point
5. pH value (suspension in water): 4.0–4.8, weak acidity
6. Hygroscopy: Slightly hygroscopic under high humidity
7. Crystal characteristic: Fine flaky crystal, poor fluidity when exposed to moisture
8. UV absorption: Has characteristic absorption peaks at 256 nm and 365 nm

Chemical Properties

1. Molecular structure: Composed of pteridine ring, p-aminobenzoic acid and glutamic acid three fragments, multi-nitrogen heterocyclic vitamin
2. Amphoteric property: Contains carboxyl and multiple nitrogen heteroatoms, reacts with alkali to form soluble folate salts (sodium folate)
3. Thermal stability: Unstable under high temperature; boiling aqueous solution will rapidly degrade and lose activity
4. Photolysis characteristic: Extremely sensitive to ultraviolet light; strong light irradiation quickly decomposes and fades
5. Acid-base stability: Stable in neutral weak acid environment; strong acid heating breaks the pteridine ring; strong alkali promotes hydrolysis of glutamic acid side chain
6. Redox property: Easily oxidized by oxidants such as hydrogen peroxide, potassium permanganate to form inactive degradation products
7. Chelation ability: Can form complexes with metal ions like iron, zinc, copper
8. Compatibility: Compatible with other B vitamins, food excipients; incompatible with strong oxidants, concentrated acid, strong light, high-temperature heating
