Chemical Properties

- Acid-Base Character: Weak organic acid, aqueous solution presents weak acidity.
- Reactivity: Contains unsaturated double bonds, prone to oxidation and polymerization under high temperature, strong light or oxidizing environment. Reacts with alkalis to form sorbate salts.
- Heat Resistance: Decompose gradually at temperature above 200 °C.
