Introduction

Invert sugar is a mixture containing equal amounts of glucose and fructose, obtained by reacting sucrose with dilute acid or enzymes. When the sugar solution is heated to boiling, sucrose molecules hydrolyze into one molecule of fructose and one molecule of glucose. This process is called sugar inversion, and the two products are collectively called invert sugar. Using 10%–15% invert sugar can prevent sucrose recrystallization and is commonly used in hard candy manufacturing. When made into an invert sugar injection solution, it has the following uses: 1. Drug diluent. 2. Suitable for fluid rehydration therapy for patients requiring non-oral replenishment of fluids or energy.

Chemical Properties

A sweet-tasting hygroscopic liquid, a white or pale yellow viscous syrup, with a sweetness approximately 70%–90% that of sucrose. It is levorotatory, with a specific rotation of -40.5°. It is readily soluble in water, glycerol, and ethylene glycol, and very slightly soluble in acetone and ethanol. It has reducing properties and can reduce Fehling's solution. Uses: Sweetener; humectant. Widely used in various foods, especially candies (to prevent crystallization) and pastries (to retain moisture), and also as a raw material for brewing.

Production Methods

Acidic hydrolysis of sucrose: Using 65% sucrose solution as raw material, dilute hydrochloric acid is added to 0.25%, and the mixture is reacted at 52℃ for 1 hour, then neutralized with sodium bicarbonate. Alternatively, sucrose can be converted using invertase at pH 3-4. The conversion rate of sucrose can reach 96%.
